Another way to prepare eggs! Mine are usually scrambled or fried, but that’s getting awfully boring. I’m really digging the idea of baking them on top of a bed of sautéed spinach. I suppose you could throw any other veggies you’d like in there, too. Perhaps some red peppers or onions? Top it with a bit of cheese, and bake!
