I like Gina’s idea of topping mashed baked potatoes with veggies! It’s like two sides in one. This makes the veggies look and taste better; always a challenge in my house. She also sneaks a bit of cauliflower into the mashed potatoes for a healthier and skinnier option. I need to start doing that!
